I must admit, one of my favorite activities during the holidays is my annual glass of eggnog on Christmas Eve and/or Christmas Day, preferably while I’m watching The Christmas Story. I love eggnog. There’s nothing quite like its thick, rich and creamy texture and flavor.

Following a low-carb Paleo diet does not mean that you have to forgo these types of beloved holiday traditions.

If you buy the traditional store bought option, then it will be loaded with sugar and other undesirables. Even the organic brands are loaded with sugar. With just a little creativity and tweaking in your own kitchen, you can create a homemade eggnog recipe that is scrumptious and healthy.

Ingredients 2/3 cup whole milk 1 cup heavy cream 2 egg yolks 1/2 tsp nutmeg Dash of cinnamon 1/8 tsp vanilla Stevia to taste Directions Put cream milk and egg yolks in blender and blend about 1 minute Add stevia and nutmeg and pulse a few times Chill and serve.

Not only is this favorite holiday treat delicious, but its good for you as well. Eggnog is a rich source of fat, protein and calories, which is good news for those of us following a low-carb or ketogenic diet. It also contains a fair amount of other valuable nutrients like vitamin A, potassium, sodium, selenium, choline, B12, and riboflavin. Although it does provide a significant level of calcium, the calcium is not really absorbable unless you’re using raw dairy.

After you remove the sugar and alcohol, as we do here, then there really is no reason to feel guilty for indulging in this time honored tradition. So enjoy!

However, if you want to remain completely Paleo compliant, or you simply cannot do dairy for one reason or another, then this recipe can be made with coconut milk instead as detailed below.
